Vermicelli Salad
I tend to think of this fish as a good base to eat leftover. If you have leftover spring rolls, steak, pork skewers, or chao tom, you can add that on top with a little prepared fish sauce.
Ingredients:
Rice noodles
Cucumbers
Herbs (mint, Thai basil, purple perilla)
Lettuce
Fish Sauce Ingredients (fish sauce, vinegar or lime, and white sugar)
Leftover or perhaps fresh made protein (Spring Rolls, Steak, lemongrass beef or pork, etc.)
Instructions:
Boil rice noodles until cooked and rinse with cool water. Set aside.
Cut cucumbers into matchsticks, slice lettuce, and wash herbs.
In a bowl make a bed of noodles and lettuce. Add some of the cucumber on one side and the protein on the other side. Add herbs as desired and pour prepared fish sauce over top.
