Tofu, Mushroom, Bamboo Shoot Soup
Ingredients:
Vegetable broth
Carrots
Bamboo shoot
Mushrooms
Tofu (Fried)
Daikon or turnip
Soy sauce

1. Slice and boil bamboo shoot beforehand in a separate pot. If you don’t have pre-fried tofu, this would be the time to fry them up.
2. Chop carrots, mushrooms, daikon, and tofu.
3. In a medium soup pot add some olive oil and heat up. Add the carrots and cook for a minute or two.
4. Add vegetable broth, daikon, bamboo shoot, and mushrooms. Let this cook for 5-10 minutes. Add tofu and a few shakes of soy sauce until desired flavor.
