Tiramisu

Ingredients:

2 lbs of mascarpone cheese

6 eggs (separate whites from yolks)

1 ¼ cups of granulated sugar

¼ milk

2 cups of espresso coffee (brewed)

½ cup Kahlua

½ cup Grand Marnier (I add an extra splash or shot because I like the flavor)

Ladyfingers cookies

Cocoa powder for garnish

Chocolate covered coffee beans (optional) (garnish)

Instructions:

  1. In a mixer, whip the egg yolks with the sugar until it turns almost white. Then add the mascarpone. 

  2. In a separate bowl whip the egg whites until they can form stiff peaks. Then fold the egg whites into the sugar and mascarpone mixture.

  3. Prepare a dish that’s about 8 by 10 inches.

  4. Mix the coffee, Kahlua, and Grand Marnier into a bowl (I like to use a large measuring cup) that’s wide enough to dip the ladyfingers into. 

  5. Quickly dip the ladyfingers into the coffee and liqueurs mixture (It doesn’t take long for the cookies to absorb the liquid), and create a base layer in the pan in tight neat rows. Once the base layer is complete, pour half of the mascarpone cream on top and smooth it out. Repeat the ladyfingers submerging and arranging for a second layer on the cream. Then spread the rest of the mascarpone cream over the second layer. 

  6. Sift cocoa powder on top and sprinkle chocolate covered coffee beans on top to garnish.
