Soy Kho

Ingredients:

Poached lotus root

Bamboo shoot

Fried tofu (ideally triangle but rectangular prism is fine)

Canned pineapple

Shiitake mushrooms or similar

Tomato

Soy sauce

Natural sugar

Instructions:

1. Boil bamboo shoot to get rid of any bacteria (if you get the bamboo from the public tub).

2. Slice or chop tomatoes.

3. Slice everything.

4. Put oil and a pan and have an empty bigger pot available.

5. Pan fry mushrooms—set aside in other pot.

6. Pan fry lotus root—set aside in other pot.

7. Fry up the tomato a little bit so it cools down a little, add soy sauce and sugar, ¼ cup of soy sauce and an ⅛ cup of sugar.

8. Put all that in the pot.

9. Add pineapple, onion, and drained bamboo shoot to the big pot and 10-12 cups of water depending in the pot, it should seem full but certainly not to the brim.

10. Let simmer for a while then taste.

11. Add any extra desired flavors (like something spicy) and simmer longer for a fuller flavor.
