Sopapilla Cupcakes

Ingredients:

Cake:

1 ½ cups of flour

1 tsp baking powder

¼ tsp salt

1 tsp cinnamon

½ cup of milk

1 ½ tsp vanilla extract

1 stick of butter (softened)

¾ cup of sugar

1 egg

2 egg whites

Frosting:

1 cup of shortening

1 cup of butter

3 Tbsp vanilla extract

½ cup of milk

4-5 cups of powdered sugar

Garnish:

Sopapilla crisps

Instructions:

Cupcakes:

1. Preheat the oven to 350 degrees.

2. Whisk flour, baking powder, cinnamon and salt, then set aside.

3. Mix butter and sugar until light and fluffy. Add egg individually. Add vanilla. Gradually add the flour mixture and milk while alternating between the two. Be sure not to over mix.

4. 1 not leveled, but not heaping large cookie scoop into baking cups. 

5. Bake for 22-25 minutes.

Frosting:

1. Cream together the shortening and butter for ten minutes. Add vanilla and milk. Add the powdered sugar until desired consistency. Maybe lightly sprinkle a cinnamon-sugar mixture on top.
