Red Velvet Cupcakes

Yields about 2 1/2 dozen

Ingredients:

Cake:

2 ½ cups of flour

½ cup of unsweetened cocoa powder

1 tsp baking soda

½ tsp salt

1 cup of butter

2 cups of sugar

4 eggs

1 ½ cups of milk

1 oz of red food coloring

2 tsp vanilla extract

Frosting:

8 oz of cream cheese (softened)

¼ cup butter (softened)

2 Tbsp milk

2 tsp vanilla extract

16 oz confectioner’s sugar

Instructions:

1. Preheat the oven to 350 degrees.

2. Mix flour, cocoa powder, baking soda, and salt together and set aside.

3. Mix butter and sugar for a hot sec, until light and fluffy. Add eggs. Add milk, food coloring, and vanilla. Slowly add the dry mixture, but be sure not to over mix. 

4. Use 1 large cookie scoop.

5. Bake for 18 minutes. 

Frosting:

1. Mix cream cheese, butter, and milk until very fluffy, maybe even 10 minutes if you have patience and electricity. Add vanilla. Gradually add confectioner’s sugar until ideal and delicious.
