Mien Ga
Ingredients:
1 whole chicken (about 3lbs) (can be already cut up from the store if you need an easier meal)
Ginger (a palm-full of)
2 large sweet onions
Glass noodles (mung bean noodles)
Salt and pepper
Fish sauce
Note: you can add mushrooms if you want more umami (I would recommend black mushroom or enoki)
Instructions:
Fill a medium-large pot with water (not as big as a pho pot but still big) and put on medium-high on stove.
Peel ginger and score it as if you’re slicing it into coins but without cutting all the way through. Add to pot.
Peel sweet onions and quarter them. Add to pot.
Once pot boils add the chicken.
Skim the scum as it cooks.
Add some shakes of salt and some shakes of pepper.
Once chicken floats and starts coming apart, take it out, let it cool, then cut it into slices or shred it. Then add the carcass back in for more flavor.
Cook glass noodles separately.
Add fish sauce for more salt and flavor when you eat it.
