Cubed Beef Jerky

Ingredients:

Beef (lean, either New York or Sirloin) (2 pieces of New York)

Lemongrass (6 stalks)

Ginger (2-3 roots?)

Fish sauce (¾ cup)

Yellow rock sugar (half cup)

Water (1 cup)

Peppercorns

Instructions:

Cut beef into cubes.

Locate a nice pot with a nice lid.

Grandma: Take outer “yuck” layer off lemongrass. 

Pound the lemongrass with a pestle a bit to help the oils release. Cut into pieces and place into a pot. (Needs to be at the bottom).

Place meat into the pot on top of lemongrass.

Peel ginger. Then slice long ways. Put in the pot.

Add fish sauce.

Add rock sugar.

Add water.

Add peppercorns.

Put heat on high, when it bubbles it put on low.
