Cookies & Cream Cupcakes

(Oreos inside cake)

Ingredients:

Cake:

1 ⅓ cups of flour

¼ tsp baking soda

2 tsp baking powder

¾ cup of unsweetened cocoa powder

⅛ tsp salt

3 Tbsp of butter (softened)

1 ½ cups of white sugar

2 eggs

¾ tsp vanilla extract

1 cup of milk

Oreos

Frosting:

3 cups of powdered sugar

1 cup of butter (softened)

1 tsp vanilla extract

2 Tbsp whipping cream

12 Oreos (can also use mint Oreos to get a chocolate mint cookies & cream)

Garnish:

Mini Oreos or Oreos cut in half


Instructions:

1. Preheat the oven to 350 degrees. 

2. Sift together the flour, baking powder, baking soda, cocoa powder, and salt then set aside.

3. Cream together the butter and sugar until light and fluffy. Add the eggs, one at a time. Add vanilla. Slowly add the flour mixture and milk, alternating between the two while doing so.

4. Place Oreo at the bottom of each baking cup and 1 leveled large cookie scoop.

5. Let the batter rest for 7-8 minutes before putting in the oven.

6. Bake for 20-22 minutes. (With new oven do 18 and check and then subtract 2 ish minutes then check for other recipes too)

7. Yields barely 2 dozen.

Frosting:

1. Start by finely crushing the Oreos. Cream together butter and powdered sugar for up to ten minutes until light and fluffy. Add the vanilla and cream. Add crushed Oreos, then it should be ready for use.
