Cookie Dough Cupcakes
(cookie dough inside of cake)
Ingredients:
Cookie Dough:
1 ½ cups of flour
¼ tsp baking soda
¼ tsp salt
½ cup of butter (softened)
¼ cup of white sugar
½ cup of brown sugar
2 tsp vanilla extract
Add milk (2-3 table spoons)
1 cup of mini chocolate chips
Cake:
1 ½ cups of flour
1 tsp baking powder
½ tsp salt
1 stick of butter (melted)
1 cup of sugar
3 eggs
1 Tbsp vanilla extract
¾ cup of milk
Frosting:
¾ cup of butter
1 ¾ cups of powdered sugar
⅓ cup of packed brown sugar
¼ cup of flour
1 ½ Tbsp milk
1 tsp vanilla extract
Instructions:
Cookie Dough:
1. Whisk together flour, baking soda, and salt, then set aside.
2. Mix the butter, white sugar, and brown sugar until smooth. Add the vanilla extract. Gradually add the flour mixture. Fold in the chocolate chips. Scoop with a small cookie scoop onto a cookie sheet and freeze overnight.
3. Preheat the oven to 350 degrees.
Cupcakes:
1. Whisk flour, baking powder, and salt, then set aside.
2. Mix butter and sugar until thick and yellow. Add eggs one at a time. Add vanilla. Gradually add the flour mixture and mix, alternating between the two.
3. Fill baking cups with 1 level large scoop of batter and place cookie dough balls on top, they should sink in even if not immediately.
4. Bake for 18 minutes.
Frosting:
1. Cream butter for a moment before adding the powdered sugar. Once the powdered sugar is combined, add the brown sugar and flour. Then milk and vanilla. See where that leaves the consistency, and if necessary add more powdered sugar to firm it up.
