Garlic and Wine Clam Pasta

For 5

Clams (At least 12 per person, but I like to have at least 20 if I can help it)

1 Shallot

Pasta (linguine)

Garlic (4-5 pieces)

White cooking wine like a Sauvignon Blanc (about 2 cups)

Olive oil

Butter (1 stick)

Lemon (optional garnish)

Crusty Bread for dipping in sauce 


Instructions:

  1. Soak clams in a bowl of cold water, and if they’re alive they’ll spit out sand. Rinse out dirty sandy water. The first couple will probably be cleaning the outside shells. Rinse like 3-4 times. 

  2. Peel and chop/dice shallots and garlic. Set aside

  3. Fill pot with water for the pasta

  4. Take another pot, put some olive oil and a stick of butter in it. Once the butter is mostly melted add the shallots, after a moment add the garlic as well. Add the clams. Mix them up a bit. Pour wine in. Cover with a lid. Cook for some amount of time, they’re done when they are all open. Usually takes about 10-15 minutes to cook but it depends on the stove.

  5. Cook pasta

  6. Mix it all together

  7. Squeeze lemon on top and enjoy.
