Banh Xeo

Ingredients:

1 can of coconut milk

1 bag of Banh Xeo mix

  • Has a tumeric pouch and a main body of rice flour and starch

  • Rice flour, turmeric, salt

1 cup of rice flour (not including what is in the pouch)

3 1/2 cups of water

Green Onion

Shrimp

Pork

Bean Sprouts

White Onion

Fish Sauce

Instructions:

1. Batter- Mix the can of coconut milk with the package of turmeric, starch and rice flour. Add the other cup or rice flour. Add 3 ½ cups of water and mix until smooth. Slice some green onion and add it in as well.

2. Fillings- Cut shrimp in half and then boil/cook it. Slice pork into bite sized pieces and cook. Slice a white onion. Have bean sprouts.

3. Cooking- Use a nonstick frying pan and put a teaspoon of oil in it. The heat should be pretty high but we aren’t looking for bubbling or anything crazy. Add some onion, pork, and shrimp. Then add enough batter to cover the bottom. Cover with a lid. After a couple minutes add the bean sprouts and re-cover. Once it looks solidified it should slide easily and you can fold it in half and plate it.

4. Add prepared fish sauce when eating if it please you.
